Gleich zwei Vorsätze müssen wir über Bord werfen:
- Wir wollten nie selber Bier brauen.
- Brigitte wollte nie für Gäste kochen.
Wie es im Leben so ist: Ersten kommt es anders und zweitens als man denkt!
Häufig bekommen wir nach einer Führung durch den Hopfenlehrpfad folgenden Satz zu hören: «Die Hopfen sind ja sehr schön und spannend, aber nun wäre es sehr interessant auch noch selber ein Bier zu brauen.» Genügend Platz dafür haben wir. Kurzerhand richten wir in der Scheune, dort wo wir bis anhin das Heu abluden, eine Braustube mit einer 50-Liter-Pfanne ein.
Wie sieht dies nun rechtlich aus wenn wir Bier brauen wollen? Welche Vorschriften gelten?
Solange Bier unentgeltlich abgegeben und konsumiert und eine bestimmte Ausstossmenge nicht überschritten wird (400 Liter pro Privatperson respektive 800 Liter pro Jahr für Vereine), ist keine Biersteuer zu bezahlen und somit keine Anmeldung als Brauerei notwendig. Ist eine der Kriterien nicht erfüllt, sprich sobald Bier verkauft oder die entsprechende Menge überschritten wird, muss eine Anmeldung bei der Eidgenössischen Zollverwaltung (EZV) erfolgen.
Dies ist bei uns der Fall, wir melden uns in Bern an und erhalten eine Stammnummer, Nr. 86
Hier kurz ein paar Zahlen zum Biermarkt in der Schweiz:
1990 gab es in der Schweiz 32 Brauereien, dies war der absolute Tiefsstand, seit 1991 das Bierkartell aufgehoben wurde, registriert die Schweizerische Zollverwaltung jährlich mehr Brauhäuser im Lahr 2000 waren es bereits 81 Brauereien und im Jahr 2020 Total 1212. Rund die Hälfte der knapp 1000 registrierten Brauereien sind sogenannte Mikrobrauereien. Sie produzieren jedoch nur rund 4% des Schweizer Bieres, die Schweiz hat heute die grösste Brauerei-Dichte weltweit.

Auch beim Bier brauen ist die Nachfrage von Anfang an sehr gross. Es entsteht eine sehr gute Zusammenarbeit mit SBB-Gruppenreisen.
Solch viele Gäste müssen aber auch verpflegt werden. Brigitte sieht das ein und begräbt ihren Vorsatz «nie für Gäste zu kochen» für immer und ewig.
Kochen für Gäste ist von Gesetztes wegen in der privaten Küche nicht erlaubt, und so bauen wir im Keller unseres Wohnhauses eine Gastro-Küche ein.

Wir gewinnen mit unserem Hopfen-Essig, das ist ein Apfelessig versetzt mit Hopfendolden, Lindenblüten und Himbeeren, den Prix d´Innovation Agricole Suisse (den landwirtschaftlichen Innovationspreis des Bundes, diesen gibt es heute nicht mehr). Der Essig ist mild im Abgang und kann sogar als Trinkessig genossen werden.
