Zum Einstieg etwas zur Geschichte des Hopfens
Vermutlich nutzte der Mensch den Hopfen lange Zeit bereits als Heilpflanze, bevor diese im Mittelalter als Bierwürze entdeckte wurde. Man vermutet, dass bereits bei den alten Kulturvölkern der Babylonier und Ägypter Hopfen als aromatische Pflanze bei der Herstellung von Bier Verwendung fand. Die Urheimat des Wildhopfens dürften feuchte Bergtäler im vorderen Asien sein. Heute wird Hopfen in mehr als 50 Ländern der Erde kultiviert.
Hopfen in der Schweiz
Im 13. Jahrhundert wird der Hopfen erstmals in der Schweiz erwähnt, nicht im Zusammenhang mit Bier sondern mit Brot (um es haltbar zu machen), aus dem 16. Jarhundert stammt die Aussage „Hopff sind der Bierbrauer Würtz/der Becker braucht es auch“. Erwähnung findet der Hopfen vor allem in Arznei- und Kräuerbüchern.
Das Bier war in der Schweiz sehr lange nicht erwünscht und deren Einfuhr ins Wallis 1802 sogar verboten, da Zitat „unser Land mit genugsamen Weinwuchs gesegnet ist“. Auch der Errichtung von Brauereien waren Schranken gesetzt, um den Weinbau zu schützen. Da am Weinhandel mehr verdient werden konnte.
Erst zu Beginn des 19.Jahrhunderts entstanden infolge Aufhebung der Einschränkung und Zunftschranken in vielen Orten kleine Brauereien. Um die steigende Nachfrage nach Hopfen zu decken und vor allem auch um von den sehr starken Schwankungen des Hopfenpreises unabhängig zu sein besass fast jede Brauerei einen kleinen Hopfengarten. Einer der ersten Förderer des Hopfenbaus war der Bierbrauer und Gemeindeammann Waldis aus Viznau, seine erste Pflanzung bestand aus 50 Stöcken. Das Bier wurde „einheimischer“ und mit dem Hopfenanbau konnte gutes Geld verdient werden, was den Ausfall des schwindenden Weinbaus ausglich.
Den Höhepunkt im Hopfenanbau wurde 1880 mit 35 ha und 51 Produzenten erreicht. Danach ging der Anbau von Hopfen rapide zurück und während des 1. Weltkrieges war nur noch 1% der verbrauchten Hopfen aus der Schweiz.

Der erneute Versuch Hopfen in der Schweiz anzubauen wurde vor allem von Dr. Hans Hürlimann gestartet und wurde unterstützt durch Bundesrat Prof. Dr. F.T. Wahlen, dem damaligen Vorstand der Eidg. Landwirtschaftlichen Versuchsanstalt Zürich-Oerlikon. 1935 wurde in der Schweiz die ersten Versuchsgärten angelegt, einer in Avenex NE, einer im Areneberg TG und einer in Stammheim ZH, beim Bauern Hans Frei-Wirth. Von der Qualität und den Erträgen überzeugte nur Stammheim. Ab 1937 produzierten weitere innovative Landwirte des Tals Hopfen; zuerst für die Brauerei Hürlimann später für andere Schweizer Brauereien.
Im Jahr 1952 pflanzte auch Konrad Reutimann, der Grossvater von Markus, in Guntalingen die ersten Hopfen.

Hopfenzupfen früher

Früher war im Hopfenanbau alles Handarbeit. Vor allem für die Ernte wurde jede fleissige Hand gebraucht. Die Kinder halfen ebenfalls kräftig mit und verdienten sich damit den Bazen für den Stammer Jahrmarkt. Dieser findet übrigens seit jeher am ersten Wochenende im November statt.

Nach der Ernte müssen die Hopfen möglichst schnell getrocknet werden damit sie haltbar sind. Bis 1982 wurde der Trocknungs-Ofen auf unserem Betrieb noch mit Holz befeurt. Da dieser noch viel kleiner war als der heutige Ofen, der doch 3×3 Meter gross ist, und die Temperatur konstant 60° sein sollte, bedeutete dies oft nächtelanges Befeuern und Trocknen.

Auch das anschliessende befüllen stampfen der grossen Hopfen-Säcke, ein solcher wog bis 100kg, war reine Manneskraft.

Noch heute bedeutet Hopfenanbau: viel und intensive Handarbeit. Auch wenn viele Tätigkeiten mechanisiert wurden, rechnet man pro Hektare mit zirka 250 Arbeitsstunden. Als Vergleich: Winterweizen benötigt im Gegensatz nur 25-30 Arbeitsstunden pro Hektare.

Vor allem im Frühling, beim Ausputzen der Hopfenstöcke, sind auch heute noch viele Helfer gefragt. Das Hopfenausputzen fällt immer genau in die Ferien. Unsere Söhne können ein Lied davon singen. Was andere als Heu-Ferien kennen, heisst bei uns Hopfen-Ferien:-)

Wenn wir Glück haben, ist es Ende April schon schön und warm, und wer sich nicht eincremt, kann sich den ersten Sonnenbrand holen. Es gibt aber auch Jahre, in denen es fast nur regnet.

Für die Fitness ist ebenfalls gesorgt: Bei jedem Stock heisst es absitzen, ausputzen, aufstehen und zum nächsten Stock gehen. Bei unseren gut 4 Hektaren Hopfen machen wir das fast 10’000 Mal.

In der Schweiz werden nur im Stammertal ZH, im Fricktal AG, in Wolfwil SO und in der Kartause Ittingen bei Frauenfeld TG auf 18 Hektaren Hopfen angepflanzt. Manch einer fragt sich vielleicht, wieso die Anbaufläche nicht grösser ist. Hopfen ist, anders als andere landwirtschaftliche Kulturen in der Schweiz, dem freien Weltmarkt ausgesetzt. Der Preis dafür schiesst nicht wie die Hopfenpflanzen in schwindelnde Höhen, sondern ist eher tief. Über den üblichen Absatzkanal, die Brauereien, kann Hopfen seit zirka1990 nicht mehr kostendeckend verkauft werden.

Doch dies ist für uns kein Grund den Kopf in den Sand zu stecken.
